這 個源自阿拉伯世界的甜點大約在西元十五世紀的時候由阿拉伯商人帶進地中海地區﹝義大利和西班牙一帶﹞。西班牙傳統的牛嘎糖就是在西班牙的港口 “Alicante”開始發跡。當時政府舉辦一個美食比賽,希望可以選出既有高度營養又便於軍旅攜帶到各地的食物,這也是牛嘎糖開始廣受歡迎的開始。

牛嘎糖是將蜂蜜高溫加熱變成焦糖狀後加入堅果﹝通常是杏仁﹞和蛋白,慢慢攪拌冷卻後就是美味可口的牛嘎糖。隨著Alicante漸漸成為和拉丁美洲主要的貿易港口,蔗糖和各式不同的堅果也逐漸成為牛嘎糖的主要成分。

傳統的西班牙牛嘎糖有兩種:

  1. Alicante牛嘎糖﹝硬﹞由整顆完整的堅果製成,所以牛嘎糖本身呈現像大理石一般的花紋。
  2. Jijona牛嘎糖﹝軟﹞由研磨細緻的堅果製成。因為每顆堅果油質都因為研磨而被完全的釋放出來,牛嘎糖本身口感較為柔軟。

Turrones Dore is a leading producer of traditional as well as innovative varieties of nougats, based in San Jose, Costa Rica. The sweets produced by Dore are energizing, highly nutritious, and rich in fiber. They have non-saturated vegetable fats that benefit the metabolism. The products only use 100% natural products and contain no artificial additives.

It is believed that nougat (originally called “Turun”) was brought by Arab traders to the Mediterranean (particularly Spain and Italy) in the 15th century. Traditional Spanish “Turron” originated in the Spanish port city of Alicante, when the local government organized a contest to choose a highly nutritious food that utilized traditional local ingredients, and could be easily stored and transported by marching armies on long trips.

 

“Turron” is made by cooking honey in a deep pot until it crystallizes, then adding roasted nuts (usually almonds) and egg whites. The resulting paste is then slowly mixed with wooden pallets for hours and put in a mold for cooling. After Alicante became one of the main trading hubs with Latin America, sugar and different kinds of nuts were added to the recipe.

 

Traditionally, there are 2 varieties of Spanish “Turron”

  • Turron de Alicante (hard): Made with roasted whole nuts, which gives it a marble-like appearance and hard, chunky texture
  • Turron de Jijona (soft): Made with finely ground nuts. Grinding the nuts in advance frees their natural oils and provides a smoother, softer texture.
